How long will homemade salsa stay good in the fridge?

My husband has been making salsa at home. We are eating it like crazy and giving it to friends so we haven't had to worry about how long it can sit before we have to eat it but, he is going to make a bigger batch this time. He is using fresh everything except for the tomatoes are from a can. So, how long will it stay fresh/good?

USDA guidelines give it seven days under proper refridgeration (35 deg F). But you can do the home canning thing in a mason jar or freeze it.

  1. That depends largely on the acid content, also the amount of peppers it contains. Foods that are high in acid (tomatoes, vinegar,etc) or have high levels of capsicum (hot peppers) keep for a long time, this is one of the reasons why tabasco sauce can sit in the fridge for months.
    If it's mild salsa, and Hubby is not ading vinegar, I'd say it will keep a couple of weeks, but I'd not chance it after that.
